Happy Pancake Day all 🙂
I did extra in the gym last night so I can eat more today …I call it compromise 🙂 I do eat pancakes ALOT but Pancake Day just makes it feel extra special so I want to share my recipe with you.
Gluten Free/ Oat/ Protein Pancakes
2 egg yolks
4 egg whites
100g gluten free porridge oats
200g-cottage cheese
½ tsp. cinnamon
2 tbsp. Agave Syrup
1 tbsp. Flaxseed
3 tsps. Water
1 tsp. gluten free baking powder
Method
Place the gluten free porridge oats in a blender, blend till powder like add the gluten free baking powder and Flaxseed then blend again. In a separate bowl separate the eggs, keep the whites in a separate bowl and place the 2 yolks in another bowl. Add the agave syrup to the yolks and stir then add the cottage cheese and stir again. Whisk the egg whites until fluffy. Place all ingredients in one bowl and stir trying to get air into the mixture. Place back in the blender add the water then blend.
Use a low Calorie spray or coconut oil to cook with.
I make mine around 8 cm diameters in size. Cook on a medium heat. Leave up to 50 seconds and then flip and then again up to 50 seconds on the other side then wayyyyyheyyyy they are ready to go.
Sometimes I leave them to cool if I am making a lot then pop in the microwave for a few seconds to heat. I also freeze them in batches and just grab as I need, again place in the microwave for between 30- 60 secs and they are good to go.
Enjoy with fresh fruit, honey, yoghurt or be naughty and use nutella delicious
